Default Is having a resort the only way to own a business with employees etc?
I know about self employment options and selling to consignment store etc. But I am looking for more options where you own a commercial lot where sims visit to spend money and it gets added to your household fund. And potentially including hiring employees like with the resort. So I am not talking about just owning commercial lot and collecting rent, but profit/loss from revenue.

Also, when browsing the sims 3 store I saw the vegetable stand and the ticket machine. Does anyone know if they can be used to directly earn from? Or be used with employees in a similar way as a resort?

There are tons of ways besides resorts to collect money from sims for which the proceeds go to the community lot owner. Yes on the produce stands (see Ani's version of that on the NRaas site for a more enhanced version) and ticket booths, but really just about anything that costs customers money --bakery display goods, Savvy Seller (and again Ani's enhanced version of it), the Bistro, buffet tables (various mods to enhance) come to mind most readily. On a simpler level, if you use NRaas GoHere (new in v44) to charge for entry through a door or gate, the lot owner receives the entry fee -- this is how I do cover charges and All You Can Eat/Drink types of establishments where simply pouring tea or something like that doesn't really cost anything otherwise.

Whether any or all of that adds up to a satisfying business type of experience is another story, in my games they usually just sort of enhance things. Trying to make a living strictly from selling freshly made bakery goods or other prepared foods even with NRaas Cupcake is use for example is almost a waste of time because the overhead is high and the profit margins are impossibly low. But I still set these kinds of things up because it's kind of fun to have my sims run them as a sideline and for them to be customers rather than owners much of the time as I play through different active households rotationally.

I was looking forward to use one of those more interactive business as main income. I did the real estate buying too many times already and was trying to find something that works more like TS2 OFB. I might go for a resort business with fields and the produce stand to begin with. (I already chose the casino stuff to spend most of my points on :p) I never tried creating a resort outside of Isla Paradiso.

Oh and the GoHere mod looks very interesting. If only for sending sims away to specific lots without having to zoom out to bird view. It can disable cars too, that is an interesting idea. I can't find your use for GoHere though. On the new website I can't change the version update log and on the archive of the old website I can't find an interaction that relates to your example.

The documentation for that one might still be a bit of a mess. GoHere v44 was in beta testing for years and its beta versions went from 44a through 44n as various features were added, fixed, and adjusted. It was finally fully released a few months prior to Wikispaces shutting down, or sometime earlier in 2018 anyway. Perhaps the release notes from just after it reached that status might help?

From what I know about OFB in TS2, there isn't any real counterpart in TS3 I'm afraid.

Thank you! These notes show the door options you mentioned being added. On the older interaction list that I found it only showed a relationship based entry requirement for doors. Anyway, that is a very useful mod. Turning off cars/boats can be very interesting for specificly themed worlds. I remember people in the past asking about that possibility for medieval types of worlds etc.

As for OFB, I noticed that the Savvy Seller Something from Midnight Hollow world tries to do a similar thing, but from what I could find about it in old forum posts, also shows it has problems. But it can't be bought seperate from Midnight Hollow and I don't really care for gloomy sims worlds. My country is good enough at gloomy weather already. I want sunny or snowy instead for TS3.
