I'm not a person who enjoys cooking, but my daughter is Cuisine Sim all the way. She's making chicken enchiladas for dinner. Smells yum. She makes her own enchilada sauce. Red, not green.

Redmond Flats, my eleventy-th stab at a "Build A City" challenge. Unfortunately, I didn't keep up with documenting it. But you can find rules and tracking spreadsheets and stuff there.
For stuff what I've made, there's my LJ. There be downloads there, some of which aren't/won't be here on MTS.

It sounds delicious. Chopping garlic gets easier with practice. I hardly think anything of it anymore. There's a couple of different ways to do it, so if one way isn't working for you, try another. The most common way is this one (and it's pretty fast): http://www.youtube.com/watch?v=4FflIEjWGT8

The other way involves peeling the clove, which I find time consuming, and then making slices up to the root part while the root part is still attached and using it as a way to hold the clove while you cut. It's similar to the way most people dice onions.

Am I the only one cooking?


I made a whole grain no-knead version of anadama bread tonight and it was wonderful! That's a recipe definitely worth keeping. It was so easy and the results were wonderful! We ate it with scrambled eggs/cheese/spinach/onions/and tomatoes.

I have the makings for ratatouille again. Time to look for Julia.

ooo ratatouille - haven't made that in ages. I was trying to think on Sunday of something that was light enough for the summer months but able to warm you up (it's cold (for the time of year) here in the UK). We had chilli but ratatouille would do just fine.

Ratatouille has become one of my favorite dishes lately. So often the ingredients are in the section of the store where they sell vegetables are reduced because they need to be used right away. As a side note, I was happy to discover that in a seasoned cast iron pan means using a significantly smaller amount of oil while still having plenty of flavor.


I made barley water last night. It's an old-fashioned soft drink (not bubbly, though, like soda) made of the strained water left over from cooking barely, oranges, lemons, and brown sugar. I saw one recipe where mint was added. I might like to try that one.


*Edit* Note: Take out lemon rinds - blah - they made the whole pitcher bitter! On the other hand, the cooked barley makes a pretty good hot cereal.

That's because of the pithe (the white stuff in just under the skin), it makes things bitter and is also a natural way to set jams. o.O learnt my lesson with the first orange marmalade I made, gosh it was bitter as, but at least it set right.. unlike the second sweet and sloppy version..

Oh, that looks yummy, kampffenhoff! Thanks for sharing the recipe. Come fall, I'll give that a go.

CSA shares for summer have just started which means weekly challenges to use up various amounts and types of veggies. It's starting simple: Lots of salad stuff, some potatoes, and a nice big bag of mizuna.

Grilled ratatouille with a thick sauce on a bed of jasmine/wild rice. Simple as hell but delicious. I've been trying to cook vegetarian more often. Yesterday I made harira.

Quick dinner designed to use up greens from CSA and other sundry items on hand: Greens with sweet potato in peanut sauce served over brown rice. Nice catch-all dish and tasty, too!

Since I boiled a whole chicken, homemade chicken noodle soup tonight (with fresh pasta no less..even though I didn't make it) and chicken enchiladas will be for supper tomorrow. Unless I freeze the chicken and go with something else. Oh, and a nice loaf of French bread cuz I love dipping thick slices of buttered bread in the broth. Yummmmm.

Yeah, it's a bit hot out for soup- but it's cool in the house, lol. And I sure didn't hear the kids complaining.

Got to cook tonight, nothing flash though, but it tasted delicious! Rosemary and Garlic crusted lamb chop with thick cut crunchy potato pieces (kind of like hot chips/fries, but thicker) with a fresh garden salad (with a little bit of olive oil and balsamic vinegar as dressing). Yup it was delicious.

Kale, onion, fake bacon, and red potatoes, sauteed together and cooked in a little bit o' broth.

Summer time and there are greens to be cooked - loads of them!

Now what to do with the little bits of arugula, beets, yellow wax beans, squash, bitter green mixes, and baby bok choi?

I made a quick sauce today, nothing outrageous. Two small cans tomato paste, a little water, some olive oil, can of chopped black olives. pizza seasoning.. the one kick was adding za'atar seasoning for a middle eastern flavor.

I made Four Cheese Tortellini from scratch today. It started out as raviolli, but, then I got bored and wanted something a bit more challenging (I'm stuck at home almost all day), so, I wasted time away with the tortellini.

Tomorrow I'm thinking Canolies (sp?).

NaeShelle, that sounds ambitious and delicious. I've always wanted to give ravioli a go myself. I've made homemade manicotti before. It's easy and tasty. I've also made the skins for wontons from scratch, too. Those were a bit more difficult. Let me know how the canolies turn out.

We're trying a new soup recipe for summer squash made with carrot, potato, green pepper, onion, garlic, coconut milk and spices. All food choices are driven by the farm share I'm wondering if I could make a quick sort of pizza or focaccia type thing out of naan, cheese, and arugula?

Ver, ever heard of Laura Vitale? Her ravioli and canoli recipes are the ones I use. They're surprisingly simple and always yield great results, no matter how much I customize them. She's a great Youtube Chef; "In The Kitchen With Laura" is her channel.
