i LOVE building castles, but i cant make the roofs i need. i have been looking up how to do pointy tower roofs (see links for what i mean) but i cant find one. can someone explain how this is possible?

The first one appears to have been created using floor tiles with the CFE (constrainFloorElevation) cheat.

It's harder to tell about the second, but it has an EP which you don't have. So, either there are new types of roofs included with Nightlife, or the creator used CFE.

I see that the roofSlopeAngle cheat came with Nightlife:

That said, the creator clearly states in post #57 that she used CFE to make the roofs.
